Eric Thomas

Eric was born in Leivasy, WV, where he answered the call to preach, when he was 16 years old. He has served as Senior Pastor at Meadowbrook since February of 2026
Eric is a graduate of;
  • Richwood High School - Richwood , WV - 2008
  • Liberty University - Lynchburg ,VA - (Bachelor of Arts in Pastoral Leadership and Biblical Exposition) - 2013
  • Liberty University - Lynchburg, VA - (Master of Divinity with Pastoral Counseling Emphasis) - 2019

Pastor Eric & Meredith have been married since June 2019 and were blessed with their daughter, Charlotte Grace, in July 2025.  Eric enjoys gardening, spending time outdoors, and anything sports related. His theme for ministry is 2 Timothy 4:2.

Donna Spivey

Administrative Assistant

Donna grew up on a farm outside of Charlotte, NC. She’s been doing administrative duties since high school. In her 20’s she started attending church which led to being saved by her Lord and Savior. After marrying her husband Ed Spivey in 1995, she moved here to Caldwell County. Donna started employment with Meadowbrook Baptist Church in February of 2015. Their family consists of one daughter, Samantha and her husband Dakota and their daughter Blakely, and one son, Joe. Donna and Ed are members of Mulvale Baptist Church in Collettsville, NC where they have lived since 1998. Donna enjoys spending time with her family, horseback riding, kayaking and hiking.

Mark Cook

Minister of Music

Mark has lived in Lenoir for almost his entire life.  The son of a Baptist Minister, Mark grew up in the church and accepted Jesus Christ as his Personal Savior at a Camp Meeting in 1967.  Mark says that apart from his salvation experience, having a Father and Mother who dedicated their lives to ministry has been such a blessing.  "I have been privileged to see ministry from within a pastor's home, watching my parents share God's Amazing Love with others and seeing firsthand people's lives changed through the redemptive work of Christ Jesus. It's been awesome, and I thank my Lord most of all for Salvation, but also for such a rich Christian heritage."

Mark developed his love for Music in the church and through his time in the Hibriten High School Chorus.  Music is such an integral part of worship; it gives us the opportunity to worship our Lord, to raise our voices in praise and adoration to Christ, the one who saved us. The Word of God commands us to sing.  Psalm 105 says, "Sing to Him, sing praises to Him; tell of His wondrous works".  When we sing praises to our Lord we draw near to Him, but more importantly, we proclaim Christ's Love to others.  We serve a Mighty and Awesome God who loves us.  What better way than to raise our voices in song?  

Mark is married to his wife, Kim Clark.  They have 4 children and 9 Grandkids.  If you're looking for a Church home, please know that we at Meadowbrook Baptist would love for you to come and worship with us.

Dawn Dillard

Custodian

Dawn is a native of Lenoir, North Carolina, and a graduate of West Caldwell High School. Dawn accepted Christ as her Savior in 1996, a decision that has shaped every part of her life. She is blessed to be married to the love of her life, Bryan Dillard, and thankful for a daughter, Caydance. Family is one of God’s greatest gifts. Professionally, she works full-time for a nonprofit organization where she enjoys serving and helping others. Her faith and community are very important, and she is grateful to be part of the family at Meadowbrook Baptist Church. One of her favorite Bible verses is Psalm 56:4: “In God I have put my trust; I will not fear what flesh can do unto me.” This verse reminds me daily to place my trust fully in the Lord.
